  • Salt and pepper to taste
  • 2 cups beef broth

  • 1 bell pepper, diced
  • 1 jalapeño, diced (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and garlic. Sauté until translucent.
  3. Add ground beef. Cook until browned, breaking it apart with a spoon.
  4. Stir in bell pepper and jalapeño. Cook for 3-4 minutes.
  5. Add chili powder, cumin, smoked paprika, salt, and pepper. Stir well.
  6. Pour in crushed tomatoes and beef broth. Mix until combined.
  7. Add kidney beans and bring to a simmer.
  8. Reduce heat to low and cover. Let simmer for at least 30 minutes, stirring occasionally.
  9. Taste and adjust seasoning if necessary.
  10. Serve hot, garnished with fresh cilantro or cheese if desired.
