Ingredients

- 4 cups vegetable broth
- 1 cup bok choy, chopped
- 1 cup shiitake mushrooms, sliced
- 1 cup carrots, julienned
- 1 cup snow peas
- 1 cup broccoli florets
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- In a large pot, heat sesame oil over medium heat.
- Add garlic and ginger, sauté until fragrant.
- Pour in the vegetable broth and bring to a boil.
- Add carrots and broccoli, simmer for 5 minutes.
- Stir in mushrooms, bok choy, and snow peas, cook for another 3-4 minutes.
- Add soy sauce, salt, and pepper to taste.
- Remove from heat and garnish with chopped green onions before serving.
Notes
- For a heartier soup, add tofu or noodles.
- Adjust the vegetables based on seasonal availability.
- Serve with a side of rice for a complete meal.
