Ingredients

- 2 cloves garlic, minced
- 1-inch piece ginger, sliced
- 1 medium onion, diced
- 2 carrots, sliced
- 1 bell pepper, diced
- 1 cup broccoli florets
- 1 cup snow peas
- 4 cups vegetable broth
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- Salt to taste
- Black pepper to taste
- 2 green onions, sliced for garnish
Instructions
- Heat vegetable oil in a large pot over medium heat.
- Add garlic and ginger, sauté until fragrant.
- Stir in the onion and cook until translucent.
- Add carrots and bell pepper, sauté for 5 minutes.
- Incorporate broccoli and snow peas, stirring well.
- Pour in vegetable broth and bring to a boil.
- Add soy sauce and sesame oil, reduce heat and simmer for 15 minutes.
- Season with salt and black pepper to taste.
- Serve hot, garnished with green onions.
