A rich and decadent chocolate cake layered with blackberry filling, perfect for Halloween.
Ingredients

- 2 cups all-purpose flour
- 1 3/4 cups granulated sugar
- 3/4 cup unsweetened cocoa powder
- 1 1/2 tsp baking powder
- 1 1/2 tsp baking soda
- 1 tsp salt
- 2 large eggs
- 1 cup whole milk
- 1/2 cup vegetable oil
- 2 tsp vanilla extract
- 1 cup boiling water
- 1 cup blackberry puree
- 1/2 cup butter, softened
- 4 cups powdered sugar
- 2 tbsp milk
- Fresh blackberries for garnish
Instructions
- Preheat your oven to 350°F (175°C).
- Grease and flour two 9-inch round cake pans.
- In a large bowl, combine flour, sugar, cocoa, baking powder, baking soda, and salt.
- Add eggs, milk, oil, and vanilla. Mix on medium speed for 2 minutes.
- Stir in boiling water until well blended.
- Pour batter into prepared pans.
- Bake for 30-35 minutes or until a toothpick comes out clean.
- Cool in pans for 10 minutes, then remove from pans to cool completely.
- For the frosting, beat softened butter until creamy.
- Gradually add powdered sugar and milk, beating until smooth.
- Spread blackberry puree between the cake layers and frost the top and sides.
- Garnish with fresh blackberries.
Notes
- For a darker cake, use dark cocoa powder.
- Consider adding a splash of blackberry liqueur to the frosting for extra flavor.
- Serve with a drizzle of chocolate sauce for added elegance.
