- 1 1/2 cups chocolate cookie crumbs
- 1/2 cup unsalted butter, melted
- 12 oz dark chocolate, chopped
- 2 cups heavy cream
- 1/2 cup granulated sugar
- 4 large egg yolks
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, combine chocolate cookie crumbs and melted butter.
- Press the mixture into the bottom of a 9-inch springform pan.
- Bake for 10 minutes, then let cool.
- In a saucepan, heat 1 cup of heavy cream until just simmering.
- Remove from heat and add chopped dark chocolate, stirring until smooth.
- In a separate bowl, whisk together egg yolks, sugar, and salt.
- Gradually whisk in the chocolate mixture into the egg yolk mixture.
- Return the mixture to the saucepan and cook over low heat until thickened, about 5 minutes.
- Remove from heat and stir in vanilla extract.
- Let the chocolate mixture cool slightly, then pour over the cooled crust.
- Chill in the refrigerator for at least 2 hours.
- Whip the remaining heavy cream to stiff peaks and spread over the top before serving.
Notes
- For a richer flavor, use high-quality dark chocolate with at least 70% cocoa content.
- Garnish with chocolate shavings or fresh berries for presentation.
- Variations can include adding a layer of raspberry coulis between the mousse and the crust.
