Instructions
- Preheat your oven to 350°F (175°C).

- In a separate bowl, cream the softened butter and granulated sugar until light and fluffy.
- Add the egg, lemon zest, lemon juice, and vanilla extract to the butter mixture. Mix well.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Chill the dough for 30 minutes in the refrigerator.
- Roll the dough into balls and place them on a lined baking sheet.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Allow cookies to cool completely before glazing.
- For the glaze, mix powdered sugar and lemon juice until smooth and drizzle over cooled cookies.
