- 2 pounds of beef tenderloin
- 1 tablespoon olive oil
- 2 teaspoons salt
- 1 teaspoon black pepper
- 2 tablespoons Dijon mustard
- 8 ounces of cremini mushrooms, finely chopped
- 2 tablespoons fresh thyme, chopped
- 1 sheet of puff pastry
- 1 egg, beaten for egg wash
Instructions
- Preheat your oven to 400°F (200°C).
- Season the beef tenderloin with salt and pepper.
- Heat olive oil in a skillet over high heat. Sear the beef on all sides until browned. Remove and let it cool.
- In the same skillet, add mushrooms and thyme. Sauté until moisture evaporates. Let it cool.
- Spread Dijon mustard over the cooled beef.
- Roll out the puff pastry on a floured surface. Wrap the beef with the mushroom mixture in the pastry.
- Seal the edges and brush with egg wash.
- Bake for 25-30 minutes or until golden brown.
- Let it rest for 10 minutes before slicing.
