Description

Ingredients

  • 1 whole turkey (1214 lbs)
  • 1 cup unsalted butter, softened
  • 2 tablespoons fresh rosemary, finely chopped
  • 2 tablespoons fresh thyme, finely chopped
  • 2 tablespoons fresh sage, finely chopped
  • 4 cloves garlic, minced
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 2 cups chicken broth
  • 1 onion, quartered
  • 2 carrots, chopped
  • 2 stalks celery, chopped

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a bowl, mix the butter, herbs, garlic, salt, and pepper to create the herb butter.
  3. Pat the turkey dry and gently loosen the skin over the breast.
  4. Spread half of the herb butter under the skin and the remaining over the skin.
  5. Stuff the cavity with onion, carrots, and celery.
  6. Place the turkey on a rack in a roasting pan and pour chicken broth into the pan.
  7. Roast the turkey for 2.5 to 3 hours, basting every 30 minutes.
  8. Check the internal temperature; it should reach 165°F (74°C).
  9. Remove from the oven and let it rest for 20 minutes before carving.

Notes

  • For a crispy skin, increase the oven temperature to 375°F (190°C) for the last 30 minutes.
  • Consider using a brine for extra moisture and flavor.
  • Leftover turkey can be used in sandwiches or soups.
