A festive and flavorful Christmas dish featuring roasted turkey with a herb butter glaze.

- 1 whole turkey (12–14 lbs)
- 1 cup unsalted butter, softened
- 2 tablespoons fresh rosemary, finely chopped
- 2 tablespoons fresh thyme, finely chopped
- 2 tablespoons fresh sage, finely chopped
- 4 cloves garlic, minced
- 1 tablespoon salt
- 1 teaspoon black pepper
- 2 cups chicken broth
- 1 onion, quartered
- 2 carrots, chopped
- 2 stalks celery, chopped
Instructions
- Preheat the oven to 325°F (163°C).
- In a bowl, mix the butter, herbs, garlic, salt, and pepper to create the herb butter.
- Pat the turkey dry and gently loosen the skin over the breast.
- Spread half of the herb butter under the skin and the remaining over the skin.
- Stuff the cavity with onion, carrots, and celery.
- Place the turkey on a rack in a roasting pan and pour chicken broth into the pan.
- Roast the turkey for 2.5 to 3 hours, basting every 30 minutes.
- Check the internal temperature; it should reach 165°F (74°C).
- Remove from the oven and let it rest for 20 minutes before carving.
Notes
- For a crispy skin, increase the oven temperature to 375°F (190°C) for the last 30 minutes.
- Consider using a brine for extra moisture and flavor.
- Leftover turkey can be used in sandwiches or soups.
