  • 1/2 cup unsalted butter, softened
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons fresh sage, chopped
  • 1 tablespoon garlic, minced
  • Salt and pepper to taste
  • 4 cups chicken broth
  • 2 onions, quartered
  • 4 carrots, chopped
  • 4 celery stalks, chopped
  • 1 lemon, quartered
  • 1 apple, quartered

Instructions

  1. Preheat the oven to 325°F (165°C).
  2. In a bowl, mix the softened butter with rosemary, thyme, sage, garlic, salt, and pepper.
  3. Gently lift the turkey skin and rub the herb butter mixture underneath.
  4. Stuff the cavity with onion, lemon, apple, and some herbs.
  5. Place the turkey on a rack in a roasting pan, breast side up.
  6. Arrange carrots and celery around the turkey, adding chicken broth to the pan.
  7. Roast the turkey for about 3 to 3.5 hours, basting every 30 minutes.
  8. Use a meat thermometer to check for doneness (165°F or 74°C in the thickest part).
  9. Let the turkey rest for 20 minutes before carving.

Notes

  • For a crispy skin, increase the oven temperature to 400°F (200°C) for the last 30 minutes.
  • You can substitute the herbs based on personal preference.
