- 1 whole turkey (12–14 pounds)
- 1/2 cup unsalted butter, softened
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- 2 tablespoons fresh sage, chopped
- 1 tablespoon garlic, minced
- Salt and pepper to taste
- 4 cups chicken broth
- 2 onions, quartered
- 4 carrots, chopped
- 4 celery stalks, chopped
- 1 lemon, quartered
- 1 apple, quartered
Instructions
- Preheat the oven to 325°F (165°C).
- In a bowl, mix the softened butter with rosemary, thyme, sage, garlic, salt, and pepper.
- Gently lift the turkey skin and rub the herb butter mixture underneath.
- Stuff the cavity with onion, lemon, apple, and some herbs.
- Place the turkey on a rack in a roasting pan, breast side up.
- Arrange carrots and celery around the turkey, adding chicken broth to the pan.
- Roast the turkey for about 3 to 3.5 hours, basting every 30 minutes.
- Use a meat thermometer to check for doneness (165°F or 74°C in the thickest part).
- Let the turkey rest for 20 minutes before carving.
Notes
- For a crispy skin, increase the oven temperature to 400°F (200°C) for the last 30 minutes.
- You can substitute the herbs based on personal preference.
- Consider pairing with a red wine reduction sauce for added flavor.
