- 1 box of white cake mix
- 1 cup of coconut milk
- 1/2 cup of vegetable oil
- 3 large eggs
- 1 cup of shredded coconut
- 1 teaspoon of vanilla extract
- 1/2 teaspoon of almond extract
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the cake mix, coconut milk, vegetable oil, and eggs.
- Mix on medium speed for 2 minutes until smooth.
- Fold in the shredded coconut, vanilla extract, and almond extract.
- Pour the batter into a greased 9×13 inch baking pan.
- Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool completely before frosting.
Notes
- For a richer flavor, substitute half of the coconut milk with cream of coconut.
- Top with whipped cream and toasted coconut for a decorative finish.
