  • 1/2 teaspoon black pepper
  • 1 cup cucumber, sliced

  • 1 tablespoon sesame seeds

Instructions

  1. Rinse jasmine rice under cold water until water runs clear.
  2. In a pot, combine rice, coconut milk, chicken broth, and salt. Bring to a boil.
  3. Reduce heat, cover, and simmer for 15-20 minutes until rice is tender.
  4. In a skillet, heat vegetable oil over medium heat. Add garlic and ginger; sauté until fragrant.
  5. Add diced chicken, soy sauce, black pepper, and cook until chicken is fully cooked.
  6. Fluff the coconut rice with a fork.
  7. Assemble the bowl: place coconut rice at the base, top with chicken, cucumber, and green onions.
  8. Garnish with sesame seeds before serving.
