Ingredients

- 2 cups vegetable broth

- 1 cup mushrooms, sliced
- 1 red bell pepper, chopped
- 1 cup spinach, packed
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, garlic, and ginger; sauté until fragrant.
- Stir in curry powder and turmeric; cook for 1 minute.
- Add mushrooms and bell pepper; cook until softened.
- Pour in coconut milk and vegetable broth; bring to a simmer.
- Stir in spinach; cook until wilted.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh cilantro.

- For a spicier version, add red pepper flakes or chopped chili.
