Ingredients

- 2 cups corn kernels
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1/2 cup milk
- 1/2 cup butter, melted
- 1 cup cornmeal
- 1/4 cup sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine corn kernels, sour cream, cheddar cheese, milk, and melted butter.
- In another bowl, mix cornmeal, sugar, baking powder, salt, and black pepper.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Pour the mixture into a greased 9×13 inch baking dish.
- Bake for 45-50 minutes or until the top is golden brown and a toothpick comes out clean.
- Let it cool for 10 minutes before serving.
Notes
- For a spicier version, add diced jalapeños.
- Top with extra cheese before baking for a cheesy crust.
- Can be made ahead and reheated for convenience.
