- 2 cups beef broth

- Salt and pepper to taste
Instructions
- Season the beef with salt and pepper.
- Heat olive oil in a large pot over medium-high heat.
- Sear the beef on all sides until browned.
- Add chopped onions and garlic; sauté until translucent.
- Pour in the beef broth and bring to a simmer.
- Add carrots, potatoes, thyme, and bay leaf.
- Cover and reduce heat; simmer for 2.5 to 3 hours until beef is tender.
- Remove the beef, shred it, and return it to the pot.
- Adjust seasoning and serve hot.
