- 1 can black beans, rinsed and drained
- 1 can corn, drained
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 jalapeño, seeded and minced
- 1 small red onion, finely chopped
- 1 cup cherry tomatoes, halved
- 1/4 cup fresh cilantro, chopped
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 tablespoon lime juice
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- In a large bowl, combine black beans, corn, red and green bell peppers, jalapeño, red onion, cherry tomatoes, and cilantro.
- In a separate bowl, whisk together olive oil, red wine vinegar, lime juice, cumin, salt, and pepper.
- Pour the dressing over the bean mixture and toss gently to combine.
- Cover and refrigerate for at least 30 minutes to allow flavors to meld.
- Serve chilled or at room temperature with tortilla chips or as a side dish.

- For a smoky flavor, add diced smoked chipotle peppers.
- Substitute black beans with pinto beans for a different taste.
