A hearty cowboy cornbread casserole that combines savory ground beef, beans, and a cornbread topping.

- 1 lb ground beef
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 cup diced tomatoes
- 1 packet taco seasoning
- 1 cup shredded cheese
- 1 cup cornmeal
- 1 cup milk
- 2 large eggs
- 1 tsp baking powder
- 1/2 tsp salt
- 1/4 cup melted butter
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, brown the ground beef over medium heat.
- Add the black beans, corn, diced tomatoes, and taco seasoning. Stir until well combined and heated through.
- In a separate bowl, mix the cornmeal, milk, eggs, baking powder, salt, and melted butter until smooth.
- Spread the beef mixture evenly in a greased 9×13 inch baking dish.
- Pour the cornbread batter over the beef mixture.
- Sprinkle shredded cheese on top.
- Bake for 30-35 minutes or until the cornbread is golden brown.
Notes
- For a spicier version, add diced jalapeños to the beef mixture.
- Serve with sour cream and fresh cilantro for added flavor.
