Ingredients

  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 cup diced tomatoes
  • 1 packet taco seasoning
  • 1 cup shredded cheese
  • 1 cup cornmeal
  • 1 cup milk
  • 2 large eggs
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 cup melted butter

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, brown the ground beef over medium heat.
  3. Add the black beans, corn, diced tomatoes, and taco seasoning. Stir until well combined and heated through.
  4. In a separate bowl, mix the cornmeal, milk, eggs, baking powder, salt, and melted butter until smooth.
  5. Spread the beef mixture evenly in a greased 9×13 inch baking dish.
  6. Pour the cornbread batter over the beef mixture.
  7. Sprinkle shredded cheese on top.
  8. Bake for 30-35 minutes or until the cornbread is golden brown.

Notes

  • For a spicier version, add diced jalapeños to the beef mixture.
