- 1 cup cornmeal
- 1 cup buttermilk
- 2 large eggs
- 1 cup shredded cheddar cheese
- 1 can (15 oz) black beans, rinsed and drained
- 1 cup corn kernels, fresh or frozen
- 1 small onion, diced
- 1 bell pepper, diced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Preheat your oven to 400°F (200°C).
- In a skillet, heat olive oil over medium heat. Add onion and bell pepper, sauté until soft.
- In a bowl, mix cornmeal, buttermilk, and eggs until smooth.
- Stir in black beans, corn, sautéed vegetables, cheese, cumin, chili powder, salt, and pepper.
- Pour the mixture into a greased baking dish.
- Bake for 25-30 minutes or until the top is golden brown.
- Let it cool slightly before serving.
Notes
- For a spicy kick, add diced jalapeños.
- Top with additional cheese before baking for a crustier finish.
- Serve with sour cream or avocado for garnish.
