Ingredients

- 2 lbs beef chuck, cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 4 carrots, sliced
- 3 potatoes, diced
- 2 cups beef broth
- 1 cup red wine
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium-high heat.
- Season beef with salt and pepper, then brown in batches.
- Remove beef and sauté onions and garlic until translucent.
- Add carrots and potatoes, cooking for 5 minutes.
- Stir in tomato paste, then return beef to the pot.
- Pour in beef broth and red wine, add thyme and bay leaf.
- Bring to a boil, then reduce heat and simmer for 2 hours.
- Adjust seasoning and remove bay leaf before serving.
Notes
- For a thicker stew, remove a cup of liquid, blend it, and return it to the pot.
- Add peas or green beans for a pop of color.
- Serve with crusty bread for dipping.
