- 1 tsp ground cinnamon
- 1 large egg
- ¾ cup buttermilk
- ¼ cup vegetable oil
- 1 tbsp orange zest
- 1 cup fresh or frozen cranberries
- ¼ cup chopped walnuts (optional)
Instructions
- Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon.
- In a separate bowl, mix the egg, buttermilk, vegetable oil, and orange zest until combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Fold in the cranberries and walnuts if using.
- Divide the batter evenly among the muffin cups, filling each about ¾ full.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Let cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
Notes
- For a sweeter muffin, increase sugar to ¾ cup.
- Experiment with different nuts or add chocolate chips for variation.
- Serve warm with butter for added richness.
