- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (14.5 oz) diced tomatoes
- 1 cup chicken broth
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 1 cup corn, frozen or canned
- Fresh cilantro for garnish
Instructions
- In a large pot, sauté the onion and garlic over medium heat until softened.
- Add the diced chicken and cook until browned.
- Stir in the chili powder, cumin, salt, and pepper.
- Add the diced tomatoes, chicken broth, kidney beans, black beans, and corn.
- Bring the mixture to a simmer and cook for 20 minutes.
- Reduce the heat and stir in the cream cheese until melted and fully incorporated.
- Serve hot, garnished with fresh cilantro.
