- 8 oz fettuccine pasta
- 2 chicken breasts, boneless and skinless
- 1 tablespoon Cajun seasoning
- 2 tablespoons olive oil
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 1/2 cup diced bell peppers
- 1/4 cup chopped green onions
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions
- Cook the fettuccine according to package instructions. Drain and set aside.
- Season the chicken breasts with Cajun seasoning, salt, and pepper.
- In a large skillet, heat olive oil over medium heat. Add the chicken and cook until browned and cooked through, about 6-7 minutes per side.
- Remove the chicken from the skillet and let it rest before slicing.
- In the same skillet, add garlic and bell peppers. Sauté for 2-3 minutes until softened.
- Add chicken broth and bring to a simmer. Stir in heavy cream and Parmesan cheese. Cook for 3-4 minutes until the sauce thickens.
- Add the cooked pasta and sliced chicken to the sauce. Toss to combine.
- Garnish with green onions before serving.

- Adjust the amount of Cajun seasoning to your taste.
- For added flavor, consider marinating the chicken in the seasoning overnight.
- You can substitute shrimp for chicken for a seafood variation.
