- 1 large head of cauliflower, chopped
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- 2 tablespoons olive oil
- Salt to taste
- Pepper to taste
- Fresh chives for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add diced onion and cook until translucent.
- Add minced garlic and sauté for 1 minute.
- Stir in chopped cauliflower and vegetable broth.
- Bring to a boil, then reduce heat and simmer until the cauliflower is tender.
- Blend the mixture until smooth using an immersion blender or a stand blender.
- Return the soup to the pot and stir in heavy cream.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh chives.
Notes
- For a lighter version, substitute heavy cream with almond milk.
