Ingredients

- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 zucchini, diced
- 1 cup broccoli florets
- 1 cup cauliflower florets
- 4 cups vegetable broth
- 1 cup heavy cream
- 2 cups shredded sharp cheddar cheese
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic; sauté until translucent.
- Stir in carrots and celery; cook for 5 minutes.
- Add zucchini, broccoli, and cauliflower; sauté for another 5 minutes.
- Pour in vegetable broth; bring to a boil.
- Reduce heat and simmer for 15 minutes.
- Using an immersion blender, puree the soup until smooth.
- Stir in heavy cream and cheese; mix until melted.
- Season with thyme, salt, and pepper.
- Serve hot, garnished with additional cheese if desired.

- For a vegan version, substitute heavy cream with coconut cream and cheese with nutritional yeast.
- Consider adding cooked pasta for extra texture.
