  • 1 lb shrimp, peeled and deveined
  • 4 cups seafood stock
  • 1 cup heavy cream
  • 1/2 cup dry white wine

  • 1/2 cup carrot, finely chopped
  • 2 cloves garlic, minced
  • 3 tbsp butter
  • 2 tbsp olive oil
  • 1 tsp Old Bay seasoning
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions

  1. In a large pot, heat butter and olive oil over medium heat. Add onion, celery, and carrot. Sauté until vegetables are soft.
  2. Add garlic and cook for an additional minute until fragrant.
  3. Pour in the white wine and reduce by half, scraping the bottom of the pot.
  4. Add the seafood stock and Old Bay seasoning. Bring to a simmer.
  5. Incorporate the crab meat and shrimp. Cook until shrimp are opaque.
  6. Stir in the heavy cream and adjust seasoning with salt and pepper.
  7. Blend the bisque with an immersion blender until smooth, if desired.
  8. Serve hot, garnished with chopped parsley.
