- 1 lb fresh crab meat
- 1 lb shrimp, peeled and deveined
- 4 cups seafood stock
- 1 cup heavy cream
- 1/2 cup dry white wine
- 1/2 cup onion, finely chopped
- 1/2 cup celery, finely chopped
- 1/2 cup carrot, finely chopped
- 2 cloves garlic, minced
- 3 tbsp butter
- 2 tbsp olive oil
- 1 tsp Old Bay seasoning
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions
- In a large pot, heat butter and olive oil over medium heat. Add onion, celery, and carrot. Sauté until vegetables are soft.
- Add garlic and cook for an additional minute until fragrant.
- Pour in the white wine and reduce by half, scraping the bottom of the pot.
- Add the seafood stock and Old Bay seasoning. Bring to a simmer.
- Incorporate the crab meat and shrimp. Cook until shrimp are opaque.
- Stir in the heavy cream and adjust seasoning with salt and pepper.
- Blend the bisque with an immersion blender until smooth, if desired.
- Serve hot, garnished with chopped parsley.
Notes
- For a spicier bisque, add a pinch of cayenne pepper.
- Consider using a mix of seafood for varied flavors.
