- 8 ounces of fusilli pasta
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, finely chopped
- 1/2 cup bell pepper, diced
- 1/4 cup fresh parsley, chopped
- 1 cup mayonnaise
- 1/4 cup sour cream
- 2 tablespoons Dijon mustard
- 1 tablespoon apple cider vinegar
- Salt and pepper to taste
Instructions
- Cook the fusilli pasta in a large pot of salted boiling water until al dente. Drain and rinse with cold water to stop the cooking process.
- In a large bowl, combine the cooked pasta with cherry tomatoes, cucumber, red onion, bell pepper, and parsley.
- In a separate bowl, whisk together mayonnaise, sour cream, Dijon mustard, apple cider vinegar, salt, and pepper.
- Pour the dressing over the pasta and vegetables. Toss gently to combine.
- Chill in the refrigerator for at least 30 minutes before serving.
- Serve cold, garnished with additional parsley if desired.
