Ingredients

  • 2 cups cooked rice
  • 1 cup leftover chicken, shredded
  • 1/2 cup frozen peas
  • 1/2 cup diced carrots
  • 2 eggs
  • 3 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 1 tablespoon green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Heat sesame oil in a large skillet over medium heat.
  2. Add diced carrots and peas; sauté until tender.
  3. Push vegetables to one side of the skillet.
  4. Crack eggs into the skillet and scramble until cooked.
  5. Add cooked rice and shredded chicken to the skillet.
  6. Pour soy sauce over the mixture; stir to combine.
  7. Season with salt and pepper.
  8. Garnish with green onions before serving.

Notes

  • Use any leftover protein or vegetables.
  • Adjust soy sauce to taste.
  • For a spicy kick, add chili flakes.
