Ingredients
Scale
- 2 cups cooked rice
- 1 cup leftover chicken, shredded
- 1/2 cup frozen peas
- 1/2 cup diced carrots
- 2 eggs
- 3 tablespoons soy sauce
- 2 tablespoons sesame oil
- 1 tablespoon green onions, chopped
- Salt and pepper to taste
Instructions
- Heat sesame oil in a large skillet over medium heat.
- Add diced carrots and peas; sauté until tender.
- Push vegetables to one side of the skillet.
- Crack eggs into the skillet and scramble until cooked.
- Add cooked rice and shredded chicken to the skillet.
- Pour soy sauce over the mixture; stir to combine.
- Season with salt and pepper.
- Garnish with green onions before serving.
Notes
- Use any leftover protein or vegetables.
- Adjust soy sauce to taste.
- For a spicy kick, add chili flakes.
