Creepy Mice Cakes are a fun and spooky dessert perfect for Halloween or themed parties. These treats combine rich chocolate cake with a playful design to resemble little mice.

- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsweetened cocoa powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup vegetable oil
- 1 cup buttermilk
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup semi-sweet chocolate chips
- 12 chocolate-covered almonds (for ears)
- 24 mini marshmallows (for eyes)
- 1/4 cup red fondant (for noses)
- Black icing (for details)
Instructions
- Preheat your oven to 350°F (175°C) and grease a mini muffin tin.
- In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, and salt.
- Add the vegetable oil, buttermilk, eggs, and vanilla. Mix until smooth.
- Fold in the chocolate chips.
- Pour the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Bake for 15-18 minutes or until a toothpick inserted comes out clean.
- Allow the cakes to cool for 10 minutes before transferring to a wire rack.
- Once cooled, use a serrated knife to trim the tops of the cakes, if needed, for a flat surface.
- Decorate each cake by placing two chocolate-covered almonds on top for ears.
- Attach mini marshmallows for eyes using black icing for pupils.
- Shape small pieces of red fondant into noses and place them on the front of the cakes.
- Use black icing to add whiskers and other details as desired.
Notes
- For a richer flavor, use dark cocoa powder.
- Experiment with different toppings, like colored icing or edible glitter.
- These cakes can be made ahead and stored in an airtight container.
