Description

A hearty crock pot beef stew, rich in flavor and easy to prepare.


Ingredients

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 4 cups beef broth
  • 3 medium potatoes, diced
  • 3 carrots, sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 2 tbsp Worcestershire sauce
  • 1 bay leaf

Instructions

  1. Heat olive oil in a skillet over medium-high heat.
  2. Brown the beef cubes on all sides, then transfer to the crock pot.
  3. Add onion and garlic to the skillet; sauté until translucent.
  4. Stir in tomato paste, Worcestershire sauce, thyme, and rosemary; cook for 2 minutes.
  5. Pour mixture over beef in the crock pot.
  6. Add broth, potatoes, carrots, bay leaf, salt, and pepper.
  7. Cover and cook on low for 8 hours or high for 4 hours.
  8. Remove bay leaf before serving.

Notes

  • For a thicker stew, mix 2 tbsp cornstarch with 2 tbsp water and stir into the stew 30 minutes before serving.
  • Consider adding mushrooms or peas for additional texture.
  • Garnish with fresh parsley for a pop of color.
