A hearty crock pot beef stew, rich in flavor and easy to prepare.
Ingredients

- 2 lbs beef chuck, cut into 1-inch cubes
- 4 cups beef broth
- 3 medium potatoes, diced
- 3 carrots, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tbsp tomato paste
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
- 2 tbsp olive oil
- 2 tbsp Worcestershire sauce
- 1 bay leaf
Instructions
- Heat olive oil in a skillet over medium-high heat.
- Brown the beef cubes on all sides, then transfer to the crock pot.
- Add onion and garlic to the skillet; sauté until translucent.
- Stir in tomato paste, Worcestershire sauce, thyme, and rosemary; cook for 2 minutes.
- Pour mixture over beef in the crock pot.
- Add broth, potatoes, carrots, bay leaf, salt, and pepper.
- Cover and cook on low for 8 hours or high for 4 hours.
- Remove bay leaf before serving.
Notes
- For a thicker stew, mix 2 tbsp cornstarch with 2 tbsp water and stir into the stew 30 minutes before serving.
- Consider adding mushrooms or peas for additional texture.
- Garnish with fresh parsley for a pop of color.
