Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 3 carrots, sliced
  • 2 potatoes, diced
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons dried thyme
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium-high heat.
  2. Season the beef with salt and pepper, then sear it on all sides in the skillet.
  3. Transfer the beef to the crockpot.
  4. Add onion, garlic, carrots, and potatoes to the crockpot.
  5. Pour in the beef broth and Worcestershire sauce.
  6. Sprinkle thyme over the top.
  7. Cover and cook on low for 8 hours or high for 4 hours.
  8. Check for tenderness before serving.

Notes

  • For a thicker sauce, remove the beef after cooking and whisk in a cornstarch slurry.
  • Add mushrooms for extra flavor.
  • Garnish with fresh parsley before serving.
