Ingredients

- 2 pounds beef chuck roast
- 1 tablespoon olive oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 3 carrots, sliced
- 2 potatoes, diced
- 1 cup beef broth
- 1 tablespoon Worcestershire sauce
- 2 teaspoons dried thyme
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium-high heat.
- Season the beef with salt and pepper, then sear it on all sides in the skillet.
- Transfer the beef to the crockpot.
- Add onion, garlic, carrots, and potatoes to the crockpot.
- Pour in the beef broth and Worcestershire sauce.
- Sprinkle thyme over the top.
- Cover and cook on low for 8 hours or high for 4 hours.
- Check for tenderness before serving.
Notes
- For a thicker sauce, remove the beef after cooking and whisk in a cornstarch slurry.
- Add mushrooms for extra flavor.
- Garnish with fresh parsley before serving.
