- 4 boneless, skinless chicken breasts
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 medium onion, chopped

- 1 cup frozen peas and carrots

- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a skillet over medium heat.
- Season chicken breasts with salt, pepper, thyme, and paprika.
- Sear the chicken on both sides until golden brown, about 3-4 minutes per side.
- Transfer seared chicken to the crockpot.
- Add chopped onion, minced garlic, rice, peas, carrots, and chicken broth to the crockpot.
- Stir to combine the ingredients.
- Cover and cook on low for 6-7 hours or high for 3-4 hours.
- Once cooked, shred chicken and stir to combine.
- Adjust seasoning if necessary and serve warm.

- You can substitute brown rice, but adjust the cooking time.
- Add herbs like rosemary or basil for variation.
- For a creamier texture, add a cup of cream cheese before serving.
