- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 1 cup chicken broth
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 tablespoon olive oil
- 2 cups mixed vegetables (carrots, peas, and corn)
Instructions
- Season the chicken breasts with garlic powder, onion powder, paprika, salt, and pepper.
- Heat olive oil in a skillet over medium heat.
- Sear the chicken breasts for 3-4 minutes on each side until golden brown.
- Transfer the chicken to the crockpot.
- Add chicken broth and mixed vegetables to the crockpot.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Once done, shred the chicken with two forks and mix with the vegetables and broth.
- Serve warm.
