- 2 cups mashed sweet potatoes (about 2 medium sweet potatoes)
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup heavy cream

- 3 large eggs

- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger

- 1 pre-made pie crust
Instructions
- Preheat your oven to 350°F (175°C).
- Peel and boil the sweet potatoes until tender, about 20 minutes.
- Drain and mash the sweet potatoes in a large bowl until smooth.
- Add granulated sugar, brown sugar, heavy cream, milk, eggs, vanilla extract, cinnamon, nutmeg, ginger, and salt to the mashed sweet potatoes.
- Whisk until all ingredients are well combined and the mixture is smooth.
- Pour the sweet potato filling into the pre-made pie crust.
- Bake in the preheated oven for 55-60 minutes or until the filling is set.
- Let cool before serving. Optionally, top with whipped cream for serving.
