Ingredients

  • 4 cups of water or broth
  • 1 tablespoon of olive oil
  • 1 teaspoon of salt
  • 1 cup of mixed vegetables (carrots, peas, bell peppers)

  • 1 teaspoon of onion powder
  • Optional: protein of choice (chicken, tofu, shrimp)

Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. In a pot, bring water or broth to a boil.
  3. Add the rice, olive oil, and salt to the boiling liquid.
  4. Reduce heat to low, cover, and simmer for 18-20 minutes.
  5. In a separate pan, sauté mixed vegetables in a little olive oil until tender.
  6. If using protein, cook it in the same pan with the vegetables.
  7. Fluff the rice with a fork and combine with the sautéed vegetables and protein.
  8. Season with garlic powder and onion powder to taste.
