Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In another bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Fold in the shredded coconut and chocolate chips.
  7. Drop tablespoon-sized balls of dough onto a baking sheet lined with parchment paper.
  8. Using your thumb, create an indentation in the center of each cookie to form a nest shape.
