Ingredients

  • 8 corn tortillas
  • 2 cups shredded cooked chicken
  • 1 can (10 oz) red enchilada sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup chopped onion
  • 1/2 cup chopped bell pepper
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and sauté onion and bell pepper until soft.
  3. Add shredded chicken, garlic powder, cumin, and salt. Stir to combine and cook for another 2 minutes.
  4. Spread a thin layer of enchilada sauce on the bottom of a baking dish.
  5. Layer 4 tortillas on top of the sauce, then add half of the chicken mixture.
  6. Sprinkle half of each cheese over the chicken.
  7. Repeat the layers with the remaining tortillas, chicken mixture, and cheeses.
  8. Pour the remaining enchilada sauce over the top.
  9. Bake for 25-30 minutes until the cheese is bubbly and golden.
  10. Garnish with fresh cilantro before serving.

Notes

  • You can substitute the chicken with beef or beans for a vegetarian option.
  • For added flavor, consider adding jalapeños or olives.
  • Serve with sour cream or guacamole for extra richness.
