Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, brown the ground beef over medium heat. Drain excess fat.
  3. Add onion and garlic to the skillet and sauté until soft.
  4. Stir in kidney beans, diced tomatoes, corn, rice, chili powder, cumin, salt, and pepper. Mix well.
  5. Transfer the mixture to a greased casserole dish.
  6. Top with shredded cheddar cheese.
  7. Bake for 25-30 minutes, or until the cheese is melted and bubbly.
