- 1 lb ground beef
- 1 can (15 oz) kidney beans, drained
- 1 can (15 oz) diced tomatoes
- 1 cup corn
- 2 cups cooked rice
- 1 cup shredded cheddar cheese
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, brown the ground beef over medium heat. Drain excess fat.
- Add onion and garlic to the skillet and sauté until soft.
- Stir in kidney beans, diced tomatoes, corn, rice, chili powder, cumin, salt, and pepper. Mix well.
- Transfer the mixture to a greased casserole dish.
- Top with shredded cheddar cheese.
- Bake for 25-30 minutes, or until the cheese is melted and bubbly.
- Let it cool for a few minutes before serving.
Notes
- For a vegetarian option, substitute ground beef with lentils or quinoa.
- Add bell peppers for extra flavor and color.
- Serve with a side salad for a complete meal.
