Instructions
- In a large bowl, combine the cooked quinoa, black beans, corn, red bell pepper, cherry tomatoes, red onion, and cilantro.
- In a separate small bowl, whisk together the lime juice, olive oil, cumin, salt, and pepper.
- Pour the dressing over the quinoa mixture and toss to combine.
- Allow the salad to sit for at least 15 minutes to let the flavors meld.
- Serve chilled or at room temperature, garnished with additional cilantro if desired.
