Description

A simple and quick recipe for a classic spaghetti aglio e olio.


Ingredients

  • 400g spaghetti
  • 6 cloves garlic, thinly sliced
  • 120ml extra virgin olive oil
  • 1 tsp red pepper flakes
  • Salt, to taste
  • Fresh parsley, chopped, for garnish
  • Parmesan cheese, grated, for serving (optional)

Instructions

  1. Boil water in a large pot. Add salt and spaghetti. Cook until al dente, according to package instructions.
  2. While pasta cooks, heat olive oil in a large skillet over medium heat.
  3. Add garlic and red pepper flakes. Sauté until garlic is golden, about 2 minutes.
  4. Drain spaghetti, reserving some pasta water. Add spaghetti to the skillet.
  5. Toss spaghetti in the garlic oil mixture. Add pasta water as needed for desired consistency.
  6. Season with salt and garnish with parsley.
  7. Serve with grated Parmesan cheese if desired.
