Instructions
- Preheat your oven to 400°F (200°C).
- Line a sheet pan with parchment paper for easy cleanup.
- In a large bowl, combine the chicken thighs, broccoli, and red bell pepper.
- Add olive oil, garlic powder, paprika, salt, and pepper. Toss to coat evenly.
- Spread the mixture onto the prepared sheet pan in a single layer.
- Bake for 25-30 minutes or until the chicken is cooked through and vegetables are tender.
- Remove from the oven and let it rest for 5 minutes before serving.
Notes
- For a spicy kick, add red pepper flakes.
- You can substitute chicken with tofu for a vegetarian option.
