- 1 bay leaf
- Salt to taste
- Black pepper to taste
- 2 tablespoons olive oil
- Fresh parsley for garnish
Instructions
- Drain and rinse the soaked white beans.
- In a large pot, heat olive oil over medium heat.
- Add onion, garlic, carrots, and celery, sauté until softened.
- Add beans, vegetable broth, thyme, bay leaf, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 1 to 1.5 hours until beans are tender.
- Remove bay leaf and blend the soup partially for a creamy texture, if desired.
- Adjust seasoning and serve hot, garnished with fresh parsley.
