- 1 cup cottage cheese
- 1/2 cup shredded cheese (cheddar or your choice)
- 1/2 cup diced vegetables (bell peppers, spinach, or your choice)
- Salt to taste
- Pepper to taste
Instructions
- Preheat your oven to 325°F (163°C).
- In a blender, combine eggs, cottage cheese, salt, and pepper. Blend until smooth.
- Stir in the shredded cheese and diced vegetables.
- Grease a muffin tin or use silicone molds.
- Pour the egg mixture evenly into each mold, filling them about 3/4 full.
- Bake for 25-30 minutes or until the egg bites are set and slightly puffed.
- Let cool for a few minutes before removing from molds.
- Serve warm or refrigerate for later use.
