- 1 teaspoon lemon juice
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar.
- Add eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- In another bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt.
- Gradually add the dry ingredients to the wet mixture, blending until just combined.
- Fold in the pumpkin puree and walnuts if using.
- Pour the batter into the prepared baking pan and smooth the top.
- Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
- While the cake is cooling, prepare the cream cheese frosting. Beat the cream cheese until smooth, then gradually add the powdered sugar and lemon juice until combined.
- Once the cake is completely cool, spread the cream cheese frosting evenly over the top.
Notes
- This recipe can be made as cupcakes, reduce baking time to 20-25 minutes.
- For a spiced variation, add ginger or allspice to the batter.
- Consider garnishing with caramel sauce or a sprinkle of cinnamon for visual appeal.
