Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar.
  3. Add eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In another bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt.
  5. Gradually add the dry ingredients to the wet mixture, blending until just combined.
  6. Fold in the pumpkin puree and walnuts if using.
  7. Pour the batter into the prepared baking pan and smooth the top.
  8. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  9. While the cake is cooling, prepare the cream cheese frosting. Beat the cream cheese until smooth, then gradually add the powdered sugar and lemon juice until combined.
  10. Once the cake is completely cool, spread the cream cheese frosting evenly over the top.
