Ingredients

- 2 cups cooked quinoa
- 1 cup black beans, rinsed and drained
- 1 cup corn kernels
- 1 red bell pepper, diced
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a skillet over medium heat.
- Add onion and garlic, sauté until translucent.
- Stir in red bell pepper, cook for 3 minutes.
- Add quinoa, black beans, corn, cumin, smoked paprika, salt, and pepper.
- Mix well and cook for an additional 5 minutes.
- Allow to cool before portioning into freezer-safe containers.
- Label and freeze for future use.
Notes
- Consider adding diced jalapeños for heat.
- Use fresh herbs for added flavor before serving.
- This mixture can be used as a filling for wraps or tacos.
