Ingredients

  • 1 cup corn kernels

  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add onion and garlic, sauté until translucent.
  3. Stir in red bell pepper, cook for 3 minutes.
  4. Add quinoa, black beans, corn, cumin, smoked paprika, salt, and pepper.
  5. Mix well and cook for an additional 5 minutes.
  6. Allow to cool before portioning into freezer-safe containers.
  7. Label and freeze for future use.
