- 4 large onions, thinly sliced
- 4 tablespoons unsalted butter
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon sugar
- 2 cloves garlic, minced
- 1/2 cup dry white wine
- 4 cups beef broth
- 1 tablespoon fresh thyme leaves
- 1 cup grated Gruyère cheese
- 1/2 cup grated Parmesan cheese
- Freshly cracked black pepper to taste
Instructions
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, melt the butter and olive oil over medium heat.
- Add the sliced onions and salt. Cook, stirring frequently, until the onions are deeply caramelized, about 30-40 minutes.
- Add sugar and garlic, and cook for an additional 2 minutes.
- Deglaze the pan with white wine, scraping up any browned bits. Allow to reduce by half.
- Add beef broth and thyme, then bring to a simmer.
- Mix in the cooked pasta, ensuring it is well coated with the sauce.
- Stir in Gruyère and Parmesan cheese until melted and creamy.
- Season with black pepper to taste and serve immediately.
Notes
- For a vegetarian version, substitute beef broth with vegetable broth.
- You can add cooked chicken or mushrooms for added protein.
- Garnish with additional cheese and fresh thyme before serving.
