  • 4 large onions, thinly sliced
  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 2 cloves garlic, minced
  • 1/2 cup dry white wine
  • 4 cups beef broth
  • 1 tablespoon fresh thyme leaves
  • 1 cup grated Gruyère cheese
  • 1/2 cup grated Parmesan cheese
  • Freshly cracked black pepper to taste

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, melt the butter and olive oil over medium heat.
  3. Add the sliced onions and salt. Cook, stirring frequently, until the onions are deeply caramelized, about 30-40 minutes.
  4. Add sugar and garlic, and cook for an additional 2 minutes.
  5. Deglaze the pan with white wine, scraping up any browned bits. Allow to reduce by half.
  6. Add beef broth and thyme, then bring to a simmer.
  7. Mix in the cooked pasta, ensuring it is well coated with the sauce.
  8. Stir in Gruyère and Parmesan cheese until melted and creamy.
  9. Season with black pepper to taste and serve immediately.
