Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 cup all-purpose flour
  • 1 cup cornmeal
  • 2 eggs, beaten
  • 1 cup buttermilk
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 8 small corn tortillas
  • 1 cup shredded cabbage
  • 1 avocado, sliced
  • 1/2 cup salsa
  • 1/4 cup fresh cilantro, chopped
  • Vegetable oil, for frying

Instructions

  1. Preheat oil in a deep fryer or large pot to 350°F.
  2. In a bowl, combine flour, cornmeal, garlic powder, paprika, salt, and pepper.
  3. Dip shrimp in buttermilk, then coat in flour mixture.
  4. Fry shrimp in batches until golden brown, about 2-3 minutes per side.
  5. Remove shrimp and drain on paper towels.
  6. Warm tortillas in a skillet.
  7. Assemble tacos by placing shrimp on tortillas, topping with cabbage, avocado, salsa, and cilantro.
  8. Serve immediately.
