Description
A rich and creamy cheesecake topped with a medley of forest fruits.
Ingredients

- 350g cream cheese
- 200g digestive biscuits
- 100g unsalted butter, melted
- 150g granulated sugar
- 200ml sour cream
- 3 large eggs
- 1 tsp vanilla extract
- 300g mixed berries (raspberries, blueberries, blackberries, strawberries)
- 50g icing sugar
- 1 tbsp lemon juice
Instructions
- Preheat your oven to 180°C (350°F).
- Crush the digestive biscuits in a food processor until fine.
- Mix the crushed biscuits with melted butter.
- Press the mixture into the base of a 9-inch springform pan.
- In a mixing bowl, beat the cream cheese and granulated sugar until smooth.
- Add sour cream, eggs, and vanilla extract; mix until combined.
- Pour the cheesecake mixture over the biscuit base.
- Bake for 50-60 minutes, until the edges are set but the center is slightly wobbly.
- Turn off the oven and let the cheesecake cool inside for 1 hour.
- Chill in the refrigerator for at least 4 hours, preferably overnight.
- In a separate bowl, mix the berries with icing sugar and lemon juice.
- Once chilled, top the cheesecake with the berry mixture just before serving.
Notes
- For a more intense flavor, add lemon zest to the cheesecake mixture.
- Consider using a water bath while baking to prevent cracking.
- Variations can include adding a fruit compote or chocolate drizzle for plating.
