Ingredients

  • 350g cream cheese
  • 200g digestive biscuits
  • 100g unsalted butter, melted
  • 150g granulated sugar
  • 200ml sour cream
  • 3 large eggs
  • 1 tsp vanilla extract
  • 300g mixed berries (raspberries, blueberries, blackberries, strawberries)
  • 50g icing sugar
  • 1 tbsp lemon juice

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Crush the digestive biscuits in a food processor until fine.
  3. Mix the crushed biscuits with melted butter.
  4. Press the mixture into the base of a 9-inch springform pan.
  5. In a mixing bowl, beat the cream cheese and granulated sugar until smooth.
  6. Add sour cream, eggs, and vanilla extract; mix until combined.
  7. Pour the cheesecake mixture over the biscuit base.
  8. Bake for 50-60 minutes, until the edges are set but the center is slightly wobbly.
  9. Turn off the oven and let the cheesecake cool inside for 1 hour.
  10. Chill in the refrigerator for at least 4 hours, preferably overnight.
  11. In a separate bowl, mix the berries with icing sugar and lemon juice.
  12. Once chilled, top the cheesecake with the berry mixture just before serving.
