- 4 large russet potatoes
- 1/4 cup olive oil
- 4 cloves garlic, minced
- 1/2 cup grated parmesan cheese
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- Fresh parsley, chopped for garnish
Instructions
- Preheat the oven to 425°F (220°C).
- Wash and scrub the potatoes thoroughly. Cut them into wedges.
- In a large bowl, combine olive oil, minced garlic, salt, pepper, oregano, and paprika.
- Add the potato wedges to the bowl and toss to coat evenly.
- Place the wedges in a single layer on a baking sheet lined with parchment paper.
- Bake for 30-35 minutes until golden brown and crispy, flipping halfway through.
- Remove from the oven and sprinkle with parmesan cheese.
- Return to the oven for an additional 5 minutes to melt the cheese.
- Garnish with chopped parsley before serving.
