Classic grilled cheese sandwich with a gourmet twist.
Ingredients

- 4 slices of sourdough bread
- 2 tablespoons unsalted butter
- 4 ounces sharp cheddar cheese, grated
- 2 ounces Gruyère cheese, grated
- 1 tablespoon Dijon mustard
- 1 tablespoon fresh chives, chopped
Instructions
- Spread Dijon mustard on one side of each slice of sourdough bread.
- Combine the grated cheddar and Gruyère cheeses in a bowl.
- Layer the cheese mixture evenly on two slices of bread, then sprinkle with chopped chives.
- Top with the remaining slices of bread, mustard side down.
- Heat a skillet over medium heat and add 1 tablespoon of butter.
- Place the sandwiches in the skillet and cook until golden brown, about 3-4 minutes.
- Flip the sandwiches, add remaining butter, and cook until the other side is golden and cheese is melted, another 3-4 minutes.
Notes
- For a variation, add sliced tomatoes or cooked bacon between the cheese layers.
- Use a panini press for an even crispier texture.
- Serve with a side of tomato soup for a classic pairing.
