Ingredients

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and halve the potatoes.
  3. In a large mixing bowl, combine olive oil, lemon juice, garlic, oregano, salt, and pepper.
  4. Add the potatoes to the bowl and toss to coat evenly.
  5. Spread the potatoes in a single layer on a baking sheet.
  6. Roast in the oven for 45-50 minutes, flipping halfway through, until golden and crispy.
  7. Remove from the oven and sprinkle with fresh parsley before serving.
