Ingredients

- 2 pounds of baby Yukon Gold potatoes
- 1/4 cup olive oil
- Juice of 2 lemons
- 4 cloves garlic, minced
- 1 tablespoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup fresh parsley, chopped
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and halve the potatoes.
- In a large mixing bowl, combine olive oil, lemon juice, garlic, oregano, salt, and pepper.
- Add the potatoes to the bowl and toss to coat evenly.
- Spread the potatoes in a single layer on a baking sheet.
- Roast in the oven for 45-50 minutes, flipping halfway through, until golden and crispy.
- Remove from the oven and sprinkle with fresh parsley before serving.
Notes
- Experiment with different herbs like thyme or rosemary.
- For added flavor, marinate the potatoes for 30 minutes before roasting.
