Ingredients

  • 4 slices of sourdough bread
  • 4 slices of cheddar cheese
  • 2 tablespoons of unsalted butter
  • 2 cups of mixed greens
  • 1 cup of cherry tomatoes, halved
  • 1/2 cucumber, sliced
  • 1/4 red onion, thinly sliced
  • 1/4 cup of balsamic vinaigrette

Instructions

  1. Heat a skillet over medium heat.
  2. Butter one side of each slice of bread.
  3. Place two slices of bread, buttered side down, in the skillet.
  4. Layer two slices of cheddar cheese on top.
  5. Top with the remaining slices of bread, buttered side up.
  6. Grill until golden brown, about 3-4 minutes per side.
  7. Remove from skillet and let cool slightly before slicing.
  8. In a large bowl, combine mixed greens, cherry tomatoes, cucumber, and red onion.
  9. Drizzle with balsamic vinaigrette and toss to combine.
  10. Plate the salad and top with grilled cheese slices.
